Come close with a few, most recently a Blacktail buck that wasn't far off, and a Moose and Black Bear also.
I did have one annoying encouter where I thought I saw a Diamond Moose with a huge set of antlers, took the shot, only to realise it was actually two regular Moose who were neatly stacked on top of each other and whose animations had synchronised perfectly, so it looked like a single massive animal.
I've downed an albino buck (can't recall if it was Blacktail or Whitetail) but it wasn't a high scoring animal; the antlers were tiny.

The second was a piece of cake, saw some tracks, tracked a few 100 yards and he came trotting out for a call and Mr. Rino did the job.
It's different for each person. Your initial herd spawn just didn't have many in it, so you are just going to have to wait to see larger ones that will respawn after you harvest other animals. It's the same for albino/piebald - some have more to begin with, some have less.
