One reason could be, because you carry a lot of stuff in your backpack, weapons and stuff.

I would say that swimming in cold waters, with a complete hunter outfit, rifles, ammo boxes, eventually tents, blinds is quite unrealistic first, and would damage a lot your stuff. I am awaiting for a video where you swim in a cold river with all this stuff IRL :)

You can duck hunt from a boat but sadly they don't have that yet and fishing would be a nice edition with all the big bodies of water in the game.

Oooh yes it is! It is also a great way to get to know the animal population in your fav hunting spot.

Why moaning instead just accepting game rules? I mean we all can moan if we reach to ♥♥♥♥♥♥ title, but this game is a next step over the old one, which was awesome as well.
I know there's still a lot of bugs in it, like music is reseting itself, game crashes and deer calls that does not make any sound sometimes... but at the end of the day - game's amazing, especially for that price.
