But you can skill the ability to see the fur type on the track. that could be helpfull to find it. But nevertheless i have not seen a single special type of fur since i leveled this skill, except the cinnamon and gold colored black bear, which are quite common.
There is also a skill which let you see the trophy rating and difficulty with the scope or binoculars, but therefore you must have found the animal already..
So however - luck is the "key"
I've killed a couple of legendarys myself over my 230+ hours played, but I've never seen a 5 - Medium.
I killed an albino moose. And I killed an mythical (9) coyote, but zero integrity shot it in his leg :S. But it is just really random.

Yes, the difficulty of the animal has nothing to do with fur type/antler size/skull size trophies that they carry.
Yeah, the one I shot caught me by surprise. I am alwasy in a crouch and hidden. I turned and it was there, so I quickly plugged it.
