I have yet to see an albino. I seen one piebald, and a golden black bear though.

I have seen 1 albino Red deer in about 60 in game hours

I shot an albino Moose today after about 120 hrs of gameplay. It's the second one I've seen. I've possibly missed many different albinos. I hope not though. I want them to be very rare.
