I will go with a single GPU, once the next gen graphics cards comes out next year or something, currently there isn't a better choice for me by going with 1 GPU, even the 1080 ti will be slower than 2 980 ti in SLI supported titles.

You can turn off SLI for individual games by the way.

I am also currently running a custom SweetFx reshade that i made for it, looks amazing even at 45fps.. :)
