The game is all about hunting and while you hunt you earn experience, and you can hunt with the .243 rifle just fine.
But here is the problem, you are already looking and focusing on the unlocks, you have to understand that they will unlock all by itself while you play, but no you want it now or as fast as possible, you can't wait to get your hands on the next gun and you are already fixated on it, but you should just play and do the missions and enjoy the slow pace of the game.
I'm very happy with the slow leveling because now it feels great when you unlock something, it would be sad if they nerfed it like most devs do when people complain about this. I think the slow leveling fits the game perfectly because of its slow paced gameplay, this game is defintly not for casuals and never will be, it's aimed at the semi-hardcore player that has patience and also enjoys playing sims in general, it would truly be a huge mistake if they are going to try to please casuals, people who like fast paced gameplay, like First Person Shooters (Counter Strike, Battlefield, Call of Duty ect.) they will never like this game and play it for long, it's simply not what they enjoy. If they change the game for them they are shooting themself in the foot because their fans that love this game will start to dislike it and become unhappy, and even stop playing, then they're left with a very small playerbase that what they would normaly have.
So again, the gameplay is slow and so are the unlocks, don't focus and play for the unlock but enjoy what you're doing, then you will not notice any grind and you will feel much more rewarding when you unlock something :)
But you can hunt different animals but you want to hunt the bigger animals and I think there lies the problem, you want it to fast, why can you not enjoy hunting the stuff you can now? There was another guy in another thread also complaining about this slow xp he wants a scent that unlocks at lvl 54 or something, but nobody needs that item to hunt in this game, he just want it but can't seem to understand he will one day get there and unlocks it after he played the game long and often enough, the game is perfectly playable without any scent, it's not required at all but he just want it faster than the game would give him, I see that as a lack of patience.
I think people that believe there is a grind or feel there is are not enjoying what they're doing at the moment because if you did enjoy and have fun, you wouldn't even notice any grind, you would play and have a good time and out of nowhere you find out you unlocked something new, I'm 100% sure that's exactly what the devs thought when they created this leveling and unlock system in the game, it keeps the game fresh for a longer period of time because after a while you get new toys to play with and so can hunter bigger animals better, I really do not see the problem here except that will all due respect people just want stuff to fast and become fixated on the level they are and the unlocks they want, but that's how I see it :)

Yes, this is why this game is unique. For these who just want to hunt bigger animals, I suggest you go play Far Cry 4 or Far Cry Primal. Probably more suited for your gaming style.
