Aside from the circling behavior, they also trigger the crinkling sound and disturbed vegitation animation as they move through it. If you're holding still, and start hearing a crinkling sound over and over again, start creeping yourself to try and get a good view. Coyote are small, and medium underbrush completely conceals them. But they're REALLY easy to down. So a clear shot is pretty much your cue to hit them.
Don't overdo the calls. Call and let it come in until it barks, then hit it again and wait.
The predators are a much more engaging hunt than the herbivores in this game.
