In that case, I think Chessmaster is still a more complete package... the learning section is massive, with extensive and good quality tutorials, the engine is good and very customizable, to create your own AI "personalities" (and there are many already), there's a database section that, while not on par with Chessbase/Scid etc. is serviceable enough, and the analysis tools are nice.
On the other hand, multiplayer is dead (and was not that well implemented in the first place) and they are not so easy to come by... I think CM 9000 was briefly on GOG but then had to be retired from the store, so as far as I know there's no digital edition available anywere, even of the latest CM XI, and you have to find a boxed copy
So then does that mean that the grandmaster in Chess Ultra employs a kind of adaptive-learning mechanism that improves with time? Or to put it another way, if I were to play against the grandmaster today, I'd have a better chance at winning than I would if I were to play against it a month or a year from now?
No, he means that the AI's numeric rating is not static but affected by match outcome. The way the AI plays is the same.
It's no different from how ELO for real players can behave - could go up or down regardless of whether player skill has changed.
ps. I'm not a he haha, Hollie here :) No way for you to have known that, but thought I would share.
