Whether a Dining car is kosher or halal, I don't know, it's definitely not ital ;)
Oh, and in the game it only gives a bonus on arrival.
Keep in mind that a train can only have eight cars. At the moment you put in a Dining car in an eight car train you only can transport seven normal cars. I prefer to decide for each train to put in a Dining car (and/or caboose and/or mailcar and/or fridge) or not and at the same moment making decisions concerning all the trains on the line (running more trains and/or making trains that only transport passengers, mail or goods).
Changing a consist somewhere on it's journey is no problem for the game. You could loose some cargo or passengers. I prefer to do it at a stop in a station.
I assume that 'new' PAX do pay the newer rates when a train with a Dining car is loaded .
Otherwise expand expand expand is the usual optimum, with maximum bonds!
But whaddya do when your cities pass 35000 population, and you need to keep growing ?; in a case of 6+ cities requiring 80000 population for a gold check mark ??
