How do you unlock girl-specific hair and panties?

In previous games you had to zoom/rotate them etc, doesn't seem to work here.
Do you just unlock it later or is there something else you have to do? I'm so used to playing Yagyu with Ryona's hair that I just can't do it with the default

As for more underwear, you'll need to play the Lengerie Lottery. There are underwear sets in there in the style of ever girl's in all the different cuts.
