Me and my friends have put 10 hours into Duck game lol. If 2 of us could play this, we'd have probably 60+ within a few months. We dump crazy amounts of time into coop games.
Me and one of my other friends have over 100 hours in stardew valley, the one I'd likely play this game with. we've got 100s of hours in racing games together. We talk about this game often, wishing it was coop.

I do like your idea of a Coop campaign option as it would bring a new dimension to the game apart from just the standard single player campaign mode and the multiplayer mode.
I've never finished the story in a Call of Duty, except when I played World at War with my brother.
Star Wars: Jedi Starfighter eventually got boring, but playing through in co-op was still great.
I find Ghost Recon just a generic stealth-optional shooter series, but with even one other player I can try tactics no other game makes possible.
I can't play more than five minutes of Minecraft or Space Engineers survival, unless I've got someone to play it with.
I find every Lego game after Clone Wars boring specifically because they've gradually ruined - and at this point all-but removed - the co-op gameplay.
For some people, myself included, playing a game that merely allows a second player and doesn't actively prevent them from helping is enough to completely change the entire game experience. That applies to an air combat game far more than most, since there's NO strategy to fighting bots in single-player, but add a co-op partner and you can start baiting the enemy and watching each other's backs in a way that Clown, Tabloid and Count just don't provide. They don't have any special behaviours, and even if they did it would be better with a player.

You think I wouldn't like to see coop in an AC game? Of course I would. But I expect coop to be a properly developed mode that functions well, and does not break game balance. Half-assed coop will get boring real quick. Take AC7. Wow, you and your pal connect to Stonehenge Defensive. Much coop, very entertaining. Whoops, you've wiped all assault forces two minutes before the bombers arrive, then bombers go down in a second. There is no challenge in AC7 missions if there are two players, and the fun of coop will wear off faster than you'll complete an erotic fanfic about Cossette and social liberties. Score attacks will be cleared off in half the time, boss plot armor will shine brighter than ever, and and the entire mission balance will fall apart. You need to modify AC gameplay *significantly* for it to work as a proper coop experience. Otherwise you'll just drop it fast and go play something with coop that is actually functional, like CoD or Borderlands.

Co-op is more fun than single player.
