Haven't purchased the DLC yet so I'm not 100% sure though.
Mission 19 and 20 feature a carrier landing and takeoff respectively but it doesn't restrict the type of plane and it would be a silly reason to buy a DLC IMO.

dragontrainerdrago202 is right, mission 3 will start & end according to the plane type you choose. Carrier based plane take off & land on carrier, other planes start with mid air refueling and end on runway landing.

However, there isn't any more carrier based missions for carrier based planes like mission 3. Mission 19 & 20 is always carrier landing & takeoff, no matter what type of plane you're flying.

Oh, there is a difference in mission 20 though, if you choose a carrier based plane, you will take off via catapult just like mission 3, otherwise your plane will take off from the end of the carrier.
Mission 3 has a carrier take-off and a carrier landing if you use the F-14...

It doesn't feel very Top Gun thought because it's mostly about fighting a jerk-boss who cheats with a shield, a bunch of drones, and hearing about a battle involving a distant Su-30 you can't actually fight on the radio.
