Ace Combat 7 plays like a modern version of Ace Combat 4 and 5
Project Wingman feels like a modern version of Ace Combat 6 with a sprinkle of Zero.
They are 2 very different games in the same genre, if you like being a fighter pilot, I suggest both
If you are more story oriented I suggest AC7, but PW still has a great story (Just not as good as AC7 imo).
If you want more of a challenge go for PW.
AC7 has more jets but fewer ways to set them up as you only get 1 secondary, in PW you can have 2 or 3 extra weapons (Though you will find your favorite may be MLAA and MLAG)
So in conclusion, if you like either one, you will like the other one too. Just know going into it that it is a very different game with similarities.
Half the fun is watching the replay at end of mission.
For me, it is a complete deal breaker. PW is DOA.
I don't play any racing or flying games without a replay system.
Why? because I can just play one that does have it.
Moreover, it has to have auto camera switching option.
Required manual camera interaction is unacceptable.
For example,
Forza Motorsport series has good replay system with auto camera option.
Forza Horizon series has a bad replay system with only manual camera.
In my opinion, AC5 Upscaled Re-Release(PS4), AC6(XBOX360), and AC7(PC) are best way to experience these SimCade flying games.
*AC6 can be played on newer xbox generations too, backwards compatible.
not only that, ascribing the quality of a replay system to whether it has automatic camera switching - which more often than not is nothing more than a roulette wheel that has as much chance of choosing a horrible camera angle as a good one - is even stranger
infogrames' driver had a great directorial mode that let you edit replays into bullitt-styled car chases, and an absolutely abhorrent RNG system behind the automated replay function
which of those functions, do you suppose, people remember it fondly by?
i also sincerely doubt you watch all the way through every second of that footage from every single mission
for comparison's sake, the gran turismo games all have replays, automated to boot
they also stop recording after an arbitrary amount of time due to memory constraints, which means you'll never get to watch all the way through that endurance race you just completed for a second time
not that it matters as nobody in their right mind would be compelled to do so in the first place
i reiterate, replays are nice to have, but not only outright refusing to play a game that lacks them, but also repeatedly (this isn't the first time i've seen you post this) alluding that people shouldn't buy PW for that particular reason is asinine
PW has its problems, but lacking replays is so, so very far down the list
that was a pre-order bonus for buying AC7's original PS4 release
obtaining that specific version nowadays requires jumping through too many hoops to make it worthwhile for a hypothetical "person who's looking for a new simcade flight game"

It just means my stance hasn't changed.
I want replays added to PW because I do want to play it.
That's my main issue. I do care and want to like PW.
The auto replay is nice for me because I like kicking back on my couch drinking a beer after the mission. I don't want to interact with the game. Just watch.
Same for racing games, I love to sit back, hands off, drinking a beer.
Track racing specifically. Don't like the open world stuff.
Good point about AC5, thats not really an option for a new person since I got that on pre-order. My bad.
So both AC5 PS4 pre-order and AC6 XBOX pre-order are still not sold individually on the digital stores, sad. :(
***Turns out its a licensing issue where pre-order was a work around.
btw, not only do I watch my replays to the end, but often the same one three times in a row.
Wash, rinse, repeat.
All day, +12hrs.
Furthermore, you might could even say that I only really play the game so i can get to the replay. lol

Fling: AC is more grounded, you need to think more of where you want to be because your plane is not a agile as in PW, to give you an idea: a high-G turn in AC7 is a normal turn in PW
Plane customization: this is were PW is absolutely better than AC7, instead of changing parts that have a minimum change on the plane performance and only choosing one special weapon, in PW you can pick and choose up to 3 simultaneous special weapons, meaning that instead of going anti air or anti ground you can go both or carry more of a certainty special weapon if you need it.
Plane variety: AC7 wins easy, outside of the fictitious planes made for the games, AC7 is more true to the real world planes and has more of them, this is because that actually have the license to use said planes, PW on its lower budget had to create "legally distinct" planes in order to avoid trouble, so the "SU-27" is going to be the "SK.27" and so on, in fact the F-22 equivalent is the "VX-23" which has its wings similar to a "Rafale" plane or a "J-20".
Missions: AC7 has more variety and longer missions, even thou some missions gimmicks are kinda annoying, PW has shorter mission and less varied, but they're consistently enjoyable, however PW has no check points.
I still honestly recommend both, I'm hopeful to see one day Ace Combat 8 as well as Project Wingman 2.
There are several guides and countless posts on getting the X52 and X56 to work with this game.
