How do you turn on sim mode?
This game is tagged as "simulation", but planes have hundreds of missiles and turn like crack raccoons? I'm assuming you start in some kind of training mode that prepares you for the real thing? And if so, I'd really like to skip it and get some more accurate simulation happening.

No sim mode. This is an action flight shooter.

Are you joking, or are you trolling? It's an arcade game about planes doing pew-pew and Metal Gear style storytelling, and always was, and this all is clearly stated in both game description and each and every available review. Also, Dark Souls is tagged on Steam as 'relaxing'.

It's a "simulation" in the sense that it replicates a real-world activity. It doesn't really intend to do so with much authenticity.

It's misleading, but they couldn't exactly call it an RPG or a fighter.

Not really because it is simulating flight just on the aircraft and not the envoment much like Microsoft flight sim X did. And like Battlefield another realistic game most of the authenticity is traded for game play like X-plane being known for it's inclusion of the Aurora a mythical aircraft.

There is quite a proper niche for AC or NFS - arcade sim. This is how they were called for ages.

This is just how genres work.

Resident Evil games are considered survival horror even though many of them are pretty much just action games with a Halloween costume party aesthetic. Mass Effect is considered an RPG even though it largely features third-person shooting. Zelda isn't considered a puzzle game even though there are a number of progress-blocking puzzles.

It's a better idea to read some reviews to see if it's what you're hoping for than to just look at the genre tags and assume it paints the picture you had in mind.
