To start off, you need the Universal Control Remapper, made by snoothy (UCR for short). Its a third party software that is available on github. When you search for ucr, search for "UCR github" or "snoothy ucr" to get the correct result.
From there, windows will promptly freak out and warn you that this program is potentially unsafe (as far as i know its a false positive, but use at your own discretion).
There is something called an "unblocker" which you will need to run in order for the program to register your input devices. (i needed to restart the program in order for my devices to show up)

After i made my first profile, i set my input devices to be my pedals, and its output device to a preset xbox controller output (something called vgim Xbox 360 controller 1) that was a preset config by default included with the software.
then, after double clicking on the profile you just made and named, a window will appear showing all the possible plugins you can assign and configure.
From here you have a list of options to play around with. I ended up using the "Axis Splitter" plugin.
(Im very new to the software, and i dont know if there is a better plugin to use here, but i know this works, and definitely lmk if you find anything better.)
In the axis splitter plugin configs, i set my input manually to be my flight rudder pedal rotational axis. Then my two "axis splitter" high and low outputs to be the LT and RT axis's on my ViGEm Xbox 360 Controller 1 output (which is the left and right triggers on an xbox controller)
I also set my deadzone to 10 (thinking that it means 10%) because the game will be very sensitive to any movement on the pedals and output a 100% signal.
Finally, ingame i changed "Acceleration/Yaw Controls" to Type B, since type A has the yaw control set to the bumpers instead of the triggers.
And that should be it!
You should now be able to control your rudders with your pedals now!

(If you'd like to invert the direction, just swap the outputs in the plugin for UCR. If anyone can figure out how to actually get ACE to register yaw as a linear axis, lmfk!)
