Even though what you said is true, you only have a limited time to find the "trailing" of where the cloud cover with highest ground elevation ends. It's not just skill, but also luck and/or preferred special weapon.
I've been completing this more than once to find proper weapons and better strategies.

thread like what? thread like pointing out that cloud mechanics don't work well? that the game doesn't really establish what "in the clouds" means?
S rank is the highest rank, saying you can't get S rank easily with a ♥♥♥♥♥♥ plane is not a very good argument. A fast plane is better because time is the factor that counts the most towards ranking. I mean, the game is already pretty easy compared to older entries in the franchise, isn't it reasonable that you need a decent enough plane and to be using proper parts/weapons to achieve S rank?
It's not supposed to be something you attain casually in your first playthrough, it's optional "content". I don't understand why you're making this point, why wouldn't you be using the very best planes and set ups to begin with? It's a performance thing, you pick the best to achieve the best result you can. Roleplaying with a bad plane should be put aside unless you just wanna do some masochistic personal challenge.

Like I said, no offense needed. Playing a mission requires strategy and skill. It always has been, no matter on what game you play.
If you take an example of Dark Souls, they're complete hardcore based on what I heard and what I watched on YouTube, but there are ways to overcome those with better strategy and planning. I myself sucked at 3 "Commander's Challenge" missions @ Red Alert 3: Uprising because this requires continuous and adaptive construction planning and strategy, of which I never got this succeeded even if I replay the Skirmishes in Red Alert 2 long time ago - with no superweapons (of which superweapons can ♥♥♥♥ your day).
Ace Combat 7 is easy af in Ace difficulty, and people complained about this since there's no "one hit kill mode" like in previous titles such as AC6. You should be able to complete this if you know the strategy. If you think this is too hard, try lowering the difficulty after the campaign run. Easy difficulty can take few missiles hit until you shot down, unless if you have unlocked Automated Fire Extinguisher part that can reduce overall damage to 50% when the damage you have exceeds the 50% threshold.
Watch the video; I installed that part to reduce accumulated damage to 50% when exceeds 50% threshold, and I enabled the "anti-collision" thingy @ Options menu to "bounce" your plane with added damage when you ram the surface, but not too steep or facing a solid obstacle.
