Adjust mapping to suit your needs. :)
I've seen X-56 threads here, but the forum search sucks so i can't find one right now.
Edited 1/31/21 to replace forum links with guide link
da foook
but yeah i just tested it with that option off, its a bit wonky and duplicated controls, so, now ill tweak it
button 5, is set to switch the view, but for some reason it also fires a missile, which points to the button = B bind, well i deleted that. ive gone through the ini, disabled big picture gamepad support, removed all the binds pointing to the UI Gamepad buttons, but AC7 simply refuses to accept that.
im at a loss now as to why i cannot fix the binds to single point binds for certain things. if namco had simply honored their deal with full pc controller support for PC, none of this junk would have to be happening.
even AC:AH had better controller support, one person used a steering wheel on ACAH!!!

I have done that as you can see now with the replies here, but now, the game simply refuses to accept the new ini profile.
now i have double and even a triple bound bind 3 items on one button, and i cannot figure out how to stop it.
Swap Missiles causes me to swap weapons and simultaneously shoot a missile,
change view causes me to change the view and shoot a missile,
accel/deccel causes me to do either function to occur, drop flares and shoot the guns........
im at a total loss now
Here is what ive done thus far:
deleted the ini, left the X-56 plugged in a started the game - no change
modified the ini and rebooted - no change
wiped out the entire appdata folder for AC7 - no change ( deleted my entire save file - oh well, i have no problem going back through the game )
FORCE OFF input - no change
Steam BIGPicture Controller support - disabled all 5 check boxes - no change
Shy of wiping out my entire steam install, im at a loss of what else to look at.
56 RHINO Profiler is running on the factory profile with no changes made to it at all "default.pr0"
From what you describe it seems:
1- the game or the profiler sends the button 2 input for both the throttle and the stick;
2- some of the bindings on the ini you posted are strange: why the throttle is "x+y"? that voice assumes only one slider axis, I get that the X56 has a split throttle but it's better to just choose one axis and use that rather than to use two.
If i right click i get two options:
Default - Profile
Clear
thats it, if i uninstall it, it acts even more erratic
I can change the throttle bind, but it seems to work just fine.
I outright uninstalled it, lets see
here is my INI now:

so, button 3 is now my missile button, well it invokes Flight_Target which is supposed to be Button6 ( that is the pinkie trigger ) as well as firing a missile, like serious, what the freak is wrong with this.
no matter what i do, the game wants to do its own damn thing. am i seriously the only one having this issue?
the only thing that works without issue is the throttle side now. the stick, is just absolutely insane and having a mind of its own.
