Generally speaking, you need to be efficient. For example at the first airport area there are two fuel tanks and an AA gun besides them, just shoot one of the tanks and the explosion from the tank will destroy the other 2 targets nearby. Also pay attention that your special weapon (LAGM) might have a blast radius and can take multiple targets if they are grouped up.
Also, use as much special weapons as possible in the first two "areas" and then head back behind the dotted line for resupply.
And most importantly, this is a difficult game, it's really fine to play on easy especially if you're not an AC veteran. I've been playing AC games since AC3 so I don't find the game that much difficult, but I can understand how it can be to newcomers.
Also, watch some videos of people getting S Rank on ACE difficulty. You will learn some good tactics, builds, and approach to missions that you haven't thought of.
Check this dude out, he has some excellent skills in the game and has a playlist of all missions S rank on ACE difficulty.
So the ATG missiles have a blast radius:
use those on concentrated units, e.g. radar towers in range of AA guns, trucks travelling on the road

I wanna try doing easy, but, I don't wanna restart the whole campaign again.
As for dodging the missiles, most of the time doing a hi-g roll or corkscrew will shake the missiles.
F.e. if missile is inbound from 4 o'clock (around bottom-right corner of the radar), it should not hit if you continue forward or steer to the right. Particular situations depending to speeds, distances and missile type should be taken into consideration but more often than not, especially so early into campaign, hi-g turn to any direction but the one that aligns your rear with a missile and radar awareness will keep your ass up in the air.
This holds true for most of the game.
