Collecting Resources
Gathering wood, stones and ore with the help of laborers provides a temporary boost to these resources. To constantly increase your resources, build a forester's lodge and mines.
If a building is lost or resources cannot be collected, villagers are released from work. Don't forget to assign them new jobs. The easiest way to do this is through the Professions window under General Information – just set the current number of workers for a given profession.
Lay new pathways using the terraforming tools – select the "Create slope" tool, highlight the cliff face and the workers will turn it into a traversable slope.
The older the tree, the more resources it contains. Chop down old trees first, as they contain the most resources. If you don't chop it down, the tree will fall and the resource will be lost.

Put a lock on the fruit double click the fruit in the resources windows then when they have eaten most vegetable unlock fruit. Veg have 1 more calourie than fruit.
Then just wait a year or so.
Once resources have buit up then build the lumberjack to keep the citizens warm in winter until you can get a tailor.
Collect lots of lumber patiently when ready build a stone mine.
You will need stone to make basic tools.
Build a baker for bread and a fishing lodge. Or the Fishfarm.
Build one house after a year.

Its a good question, does bad choice is still a choice you should make?
This mod has options where you can choose which wild plants to grow. I found that pumpkin and cabbage were too many easier to use 2 small fields.

And this one
All mammals produce both meat and skins. Sheep produce milk. Livestock reproduces at rates closer to reality. Enjoy :)
You should be okay then for a long time.
