What is the point of having a timer on an escaped animal that will die if you don't
locate it in time if you can just pause the game, find it and click on it to win the task?
I have had escaped cows hiding in the surrounding countryside that are VERY difficult
to locate but would be a snap if pause game stopped the timer.
As far as I can tell the timer does not stop for lost animals, deliver package and train
worker. Grow X before Time T or Breed Z times before time T does not seem to be
affected by pause game.
In answer to the original question on HOW to train a worker:
Go to the Farmhouse data and select workers or click on a worker house or
an individual worker. They will have one or two skills and a button next to the
bar you can click on. If the task is to train a worker to level X it will typically
cost you money to do so. If the worker requests training in a certain area then
it will be free but there will still be a timer.
