Similar to this, I remember Assassins Creed 2 having such option. Killing animations during fights would have cinematic camera by default, but you could turn it off.

Agreed. I personally happen to believe that kill animations look better when they "feel" like part of the same combat encounter, rather than when they're highlighted as cutscenes. Cutscenes are the language of cinema. I prefer the language of video games, personally.
Am I to understand that there is no option for this? That seems odd. You mentioned Assassin's Creed 2. I remember being quite annoyed at Assassin's Creed 1 for lacking this option, too. The fights looked very cool, but taking control of my camera undermined the experience.
Options - Gameplay/Accessibility - Reduce auto camera movement
(not sure why the options are duplicated across two menus)
Options - Video - Motion Blur (only somewhat useful in racing games)
While the above is not killcam disablers, they do help mitigate the spatial issues.
