Your characters 'sleep' when you aren't controlling them or have them follow you. They recover from tiredness when left back at home.

The game is purposely designed to force you to swap out survivors. So you have to let them rest when tired or inured. The day/night cycle has no effect on this. They rest when they're at base.
There is no skipping night.
(I am talking about the original DoD here though, may be different in the new one.)
This is one of the reasons I kept on asking for Outpost Lighting on Undeadlabs Wishlist to give the night time a different feel, which think makes it more interesting now.
The original State of Decay had two types of Stamina giving pills, but the best thing to boost Stamina (reduced by Tiredness) in SOD2 is the Coffee, but eventually that wears down too.
