There are multiple types of each gun too, so you could have one AR that is set to single shot while other can have multiple modes, etc.
I am a 100% positive, that my guns had multiple fire modes, I use the same weapons since my first playthrough, they must've change it.
Whether or not to call them an assault rifle is just semantics. It does not change their lethality.
You don't have to scrap guns to get the ammo. Unloading guns is a thing in this game.
You don't even need that single bullet (this was necessary in SoD1 iirc). I add that one to keep track of the weapons that I use, though. Full mag = a gun I use myself, 1 round/shell = NPC base defense gun, empty = collection or for sale. Makes it easier to find what I'm looking for.
