From all your experience, can you offer any tips? Anything about blocking, movement, really any mechanic you find useful.

Mechanics, Just Rein can help you with that.
If you want to learn how to fight/box, Well. Learn to shift your weight around first if you haven't found how to yet.

there is still a lot you can improve on from watching your vids. fighting at different distances/ movement and not getting hit so much because your are more or less in one spot. setting up shots instead of just throwing the shots you know are more likely to land against the current AI. working on the technique of your punches to make them more effective for the future and not just for this simulation. Turn up the speeds of the AI in a custom match if you want to keep challenging yourself with this game. You do some of those things sometimes, but work on mixing all together fluidly while finding and setting up solid shots.
