TotF will likely have the AI within that range, but just due to the way things work the player will probably exceed those numbers. It's just easier to sneak lots of extra punches in against the AI than in real life, especially without a whole boxing ring and less evasive movement from the AI.
Exactly how many you land, though, is largely going to depend on your play style. If you're trying to maximize cardio and keep your punch output high, then you'll easily reach over 100 punches in a 3 minute round (or more than 500 punches in a 5 minute round in your case!
One other thing I want to note. If you were to compare your results to a real boxing punch stat card, you'll see 3 of the 4 sections line up - jabs, power punches, and total punches. The remaining stat shown in TotF, "Damaging Punches", is there to specifically show you how many of your hits the judges found impressive enough to give you credit for. You'll notice this will account for most of the AI's punches and probably a lesser percentage than theirs for yours. This is what keeps the AI competitive on scoring despite the higher average punch output from the player. The AI can't hit for a higher max force than the player is capable of, but they do consistently hit hard.
I average about 120-140 punches per round. Most of my fights don't go past round 3 but that'll change as I up their stats. Like Ian said I'm trying to get to less punches (I throw a lot of jabs) and more focused combos. Sometimes I can destroy joe with about 30 (or under) punches total (usually in round 1). It feels like I'm being ultra precise and focusing completely on my feet and hips to really get that form the way I want it.
When I get tired and worked on I start to loosen up and get sloppy. That's when I get to the 140s per round. Which leaves me pretty gassed.

Looks like I was around 35 for this fight with Joe. My glove phased out (tracking issue) but I counted it too. Sometimes we go 2-3 rounds he and I. Sometimes It's like the example above.
Thats just the speed. Rest is just cardio. Aside from jabs, everything is stepping or full body punches.
