Most of the maps I've done thus far (at the part where i get a Grave Golem next), I've basically just ended up only using 13 units to attack with, and the rest were simply to farm Mana, and Convert heroes inside the dungeons.
I suppose if you're really hard pressed for money though, you could always demolish your old Treasuries, or tiles/buildings you are not using anymore. I personally build treasuries around the veins, and when veins run out, I simply delete the treasuries, get gold from it, and move onto the next one. Not only does this give you gold, but it free's up room in case you want to put something else down.
That's not true at all. The campaign level I did before grave keepr (Defense from Tanos) did NOT have a Diamond vein. I know this, because in every campaign level, I clear out the entire dungeon (For building purposes), that level did not have a diamond vein, at least not for me.
I could only assume since the missions were getting a bit more difficult, and this was a defense mission, that they gave me limited gold on purpose.
That being said, I still didn't run out of gold veins, not even close. by the end of the map, and 150 Sacrifice (and more) later, I still had around 3 gold veins left.
As I mentioned before, it's almost impossible to run out of gold in the campaign, considering you're not just using your units as fodder.
The one where you have to sacrifice tons of heroes to summon the Ultimate Evil? It absolutely has a gemstone tile, it's just more hidden than usual. IIRC it's BEHIND on of the hero gates.
The "I Am Your Father" level? Of course it did, it's down in the SW area of the map. Not even very hard to find.

Point still remains, it's incredibly HARD to run out of gold. You're more likely to run out of Research points than gold, and that for sure is infinite.
Side note.... Clear out your dungeon to build stuff, makes life easy =P
