Purpose of room efficiency?
I assume the Gobbler farm works more slowly if you have a low efficiency? What happens for the other rooms?

How important is the difference between 80% and 100%?

Rooms like Workshop and Tinker as well as Torture Chamber or Graveyard/Vortex increase the rate of the effects of the room, Increasing room efficiency to max while maintaining space is a must to min-max for later missions and gameplay. In the term of things...

80% - 100% can mean the difference of Recruiting a Hero in the Torture chamber to failing torture without the upgrade or Increasing research time in the Lecture hall by reducing the timer by up to 30 seconds.

Thanks! So far I haven't seen the need to bother with it, but I'm not that far into the campaign yet and still on normal difficulty.

From my observations, I think it reflects the time it takes for a room to create something. So a turkey farm at 50% would take twice as long as a 100% turkey farm to produce the same amount of food.

You can see it pretty clearly in the research halls (which don't require any workers). The countdown timer seems to click at half speed on a 50% room as opposed to the fully enclosed 100% version.
