If you like a more light-hearted type of game with both over- and underworld battles then go with Dungeons 2 or 3. If you prefer a darker, dungeons only experience you'll find that in War for the Overworld.
Here are some differences:
- Dungeons 3 has a different narrator and he doesn't talk like a demon; however, the Dungeons 3 narrator is excellent in his own way (Dungeon Keeper also has an excellent narrator; the games are tied in terms of the quality of the voice-acting).
- Dungeons 3 has a way better story & characterization than Dungeon Keeper. Dungeons 3 lets you really get to know the narrator as a person, and also the main character (Thalya) who takes the lead of your army (as your lieutenant). The narrator and main character are always talking to each other, and to the player, and to the creatures of their army. All this stuff is very good and super well done.
As well, Dungeons 3 has a lot of enemy characters and NPCs who talk to you a lot, but Dungeon Keeper has very little of that.
IMO Dungeon Keeper is much worse in all those regards, because it has almost no story and it barely lets you get to know anyone: not the narrator, and not any of your army's characters, and not the enemy characters.
- As others have mentioned, Dungeons 3 has an Overworld to conquer whereas Dungeon Keeper does not. In Dungeons 3, you constantly have to balance to your conquests in the Overworld vs. your building of & defense of your dungeon, and also keeping all your creatures happy.
IMO this is another improvement that makes Dungeons 3 better than Dungeon Keeper.
- Dungeon Keeper tries to mix a bit of a gritty tone with a silly/asinine/comedic tone.
In contrast, Dungeons 3 has nothing gritty about it whatsoever: it's completely over-the-top silly/asinine/comedy to the maximum, done in a parody style, on purpose. I think this is great, but some people don't like the tone (although a lot of them tend to downplay/ignore how Dungeon Keeper is very much purposely-silly as well, albeit not to the same degree as Dungeons 3 is).
- Dungeon Keeper has Horny, but Dungeons 3 doesn't have anything that is mostly equivalent to how Horny works. Dungeon Keeper is better in this aspect.
