The 100m drop on any coaster builds up a lot of fear so to rein that in I put trim brakes on it. Of course that reduced the excitement. An easy way to build excitement is to use a set of small rabbit hills to create a chain of airtime events. I spent a lot of time tweaking the track and speed just a little bit this way or that to get what I needed.
What got me really flustered was after I made the coaster in a sandbox park, I planted the blueprint in the career game and it lost about 0.3 excitement, which dropped it too low for the career game. After a couple days of adjustments in-game I finally got a working coaster.
I tested the updated blueprint in the scenario and it works as advertised, so if you get fed up with trying to make your own, you can get mine from my workshop. It requires Classic Rides DLC.

That's just one search string that turns up results, there are probably better ones. Even if you want to do it yourself instead of downloading a ready-made solution, studying the successful designs of others might be helpful.
