If you create a ride where the G forces turn people into mashed potatoes, the people will usually prefer to not be turned into mashed potatoes and so they won't ride.
If you want people to ride, you have to make it exciting and scary, but not too much. They won't ride if it's boring, and they won't ride if it'll kill them. You have to find that "Goldilocks Zone" in the middle.
