But is there a defined "before" and "after"? Because you can build "backwards", if you are after a gap. And we tried to close the gap from both sides and got no option to append

Nope there is no defined before and after, you can connect both ways.

So as you can see there is just this tiny gap, and there is no option to connect that. Neigther from the one nor from the other side :(
Edit: I think the connect symbol only shows if you didn't already build the last part of the track like you did in your screenshot. Let a larger gap, do like you want to connect them yourself, and before building it you should have the symbol to append them together.
Edit: Both the parts where at the same hight (52m) and at 0° tilt btw
Upload it on the Workshop and give me its name ;)
