Do "extras" in the concessions cut into your profits?
Like adding chili to hot dogs. Are you actually paying for the chili or is it free?

It's free. You can actually charge people more the more extras something has. Here's the perfect way of prizing stuff:

That's stupid. Why wouldn't the game charge more for supplies as you add more extras?

I had assumed the cost of doing business would go up with the number of items being added. But the desire to purchase the item would also increase (hopefully at a higher rate than the cost to operate the store).

There is a cost of doing business. Each store has an operating cost of 400. You can verify this when you click on the $ (finance) for the store. As you add extras for food/drinks, the cost of running the shop goes up. It's cummulative. All extras are added together.

For drink shops, if you add ice, the cost goes down. Of course if you add extras other than ice, it will increase the operating cost.

Yep found that. Very cool. Though the cost for drink stands appears to be a $200 base cost.

The only source is in game comparions. I open the shop, check the finances. For a food shop, I usually find operating costs are $400, plus the salaries of employees. Then I add an extras; then check the finances, I can find which extras are more/less . Since the game stacks the extra costs at the end of my selections I find my adjusted operating cost.

Bitter Jeweler made an excellent point. By knowing how much your adjusted cost of business will be you can increase the cost of your products to cover 'extra' cost increase.
