Report a translation problem
* They have too much work for their current skill level and get stressed out, which is fixed by training them and raising their pay a bit. This one is hard to diagnose, because they don't tell you directly, you have to figure it out.
* You're not paying them enough. This one is easy to diagnose because they tell you that they wish they get paid more, and is fixed obviously by doing just that.
* They don't have anything to do and get bored. They'll complain about not liking their job, and it's fixed by using work rosters efficiently or maybe you could consider firing them if they're not really that necessary.

It's under the staff menu. You basically use it to designate specific areas of the park to each staff member so that they only work in those areas and thus work more efficiently.
Challange and career mode though, Do what Don said :)
When you select your staff members, you have the option Work Roster, click to create a new one (or go to Park management under the staff page, it is the last tab along the side) you can create a new roster, as Don said, these are esentially the same as telling people to patrol certain areas of your park in stead of walking around freely (for example, you can designate certain rides to a roster so Engineers will always be near by should the ride brake down).
You can either select rides/shops/facilities using the multi select tools or using CTRL on your keyboard to create rosters. Take to mind, whilst rosters don't select paths and such, Janitors will walk along paths and do their stuff, so say you have Insanity at the left of your park entry, a coaster on the right and some toilets between them, the Janitor will clean the paths, empty bins, clean sick between. Obviously he doesn't fix rides but the roster is like splitting your park into areas or sections and then they patrol there. This works real effectively in big parks when you have a fair number of staff, it ensures a clean park, quick ride maintanence and happy people (entertainers).
