Sending sugar to dock instead of the rum factory

How do I do that? putting it in a warehouse then sending to dock doesnt work, I bought it on GOG if it matters

The easiest is to fire your rum factory workers temporarily until you fill your sugar quota at the dock. A more permanent solution is to overproduce sugar.

I find the warehouse in the vanilla game is only useful for storing large quantities of stuff you've stolen but don't need. Otherwise the dock stores a lot on its own.

Hm, I usually have the opposite situation. When you don't want the Rum Destillery to be delivered with your precious sugar, demolish the Rum Destillery and start import Rum instead...?
