plantation in full size or squeeze them together?
Planks, Rum, & Leather -- literally each of the Industries in the Colonial Era. Find a way to generate the raw resources, manufacture them, and then export them under contract. Wash, rinse, repeat.
I challenged myself to a Colonial Era financial victory ($2M) on the Pirate King map -- which can't generate Sugar or Hides. This is my baseline Colonial economy:

This. 10 Plantations in a 12x13 grid -- all facing out. The two in the center are Sugar (location matters for their Cold War upgrade). Cattle Ranches can be placed near each corner across the street to give 3 Plantations on the short side another +10%.
Boats are the most expensive export and are available from day 1 of WW. So, setting up a strong Colonial Era economy based on Planks will make your economy absolutely explode during WW.
For a quick start, build a Distillery and Tannery and just import Sugar and Hides. Then build a Pirate Cove and start looting for Hides (this is more profitable than looting for Sugar or Treasure Hunting). That setup requires very little population.
As your population grows, you can begin branching out to Logs and Planks as well as a Plantation Block -- allowing you to also begin locally-sourcing Sugar & Hides.
Exporting locally-sourced Gold isn't as profitable as you might think -- roughly $2k net annual profit per mine. If you're in it for the long haul, I recommend saving your Gold reserves for Jewelry later.
