Inventories Empty when trying to buy/sell
So recently every time I ask a merchant what they have for sale, the menu opens but the only things there are their and my characters' names. Has anyone else had this problem?

Yeah I have tons of mods, I've been checking them over and over again but I can't figure out if any of em are the issue

I don't know where to find the list of them and I don't wanna type them all out manually. Never had to do this sorta thing before

You mean the creations from the Anniversary Edition, or simply mods from the club? In general, it is better to install mods via a dedicated mod manager like "Mod Organizer 2" or "Vortex". Anyway, in your case, the mod list is in there:
\users[username]\AppData\local\Skyrim Special Edition\plugins.txt

And you installed all that from the creation club menu? Without a mod manager? And it even worked? Woah.

Well, until it didn't. That menu is only useful for downloading creations, and installing just a couple of mods. Any more, and you'll run into all kinds of funky problems, but there aren't any built-in tools to troubleshoot the issues.

Okay, let's see, when did this error start to occur? Maybe after you installed yet another mod?

I can only recommend to install mods via a dedicated mod manager. For now, try to sort your load order with this tool:

It will also provide a summary about missing dependencies, necessary patches or possible conflicts.

I can only put it down to trial and error lol. As for the issue, it started around a few days ago, or at least that was when I first noticed it. The only mods I remember installing mid-run would probably be the perk, Ordinator and Apocalypse mods.

I should also note when I had the issue I also had Carved Brink and project AHO installed but I had gotten rid of them recently.

What you're doing can be compared to changing the spark plugs through the exhaust pipe.

It could be an issue with Ordinator colliding with something. Run LOOT, it'll tell you if a patch is missing.

You can't just uninstall mods, and expect a save to continue working without them. Skyrim bakes data into the save, and if the corresponding mod is gone, then it'll cause all kinds of issues. Especially if the mod contained scripts, levelled list changes, modified NPCs, and so on. You might get away with removing some tiny mods containing only equipment, but even then, I wouldn't recommend it.

Loot says Ordinator is fine, however I have noticed the immersive citizens overhaul is clashing with Arth's Dawnstar and is also incorrectly positioned so gonna fix that

AHO and Carved Brink are mostly self-contained mods, with little impact on the game outside of their respective worlds. Your save might still be okay.

As to the merchant issue, it is likely a mod conflict. Does LOOT say anything else?

Unfortunately I deleted my saves and tried to just reinstall Skyrim and see what happens, obviously that didn't work.

As for Loot, there's a few messages about ITM records which I have no idea what those are. I installed SEEdit in order to start doing cleaning
