Your top 5 Favorite Mods for AE?
This doesn't include mods that are mandatory like Unofficial Patches or SKSE, ect. But rather, mods that not only is a quality of life improvement but also either very fun or incredible / must have.

Mine are the following:

1. Ordinator - Perks of Skyrim[www.nexusmods.com]: There is no reason to ever play Skyrim, oldrim or AE unless you have this mod (or something similar). It changes how you play the game and each perk is not only improved upon, but can impact on the game itself and gives so much variety on gameplay that it's pretty much required for anyone to have any reason coming back to play Skyrim.

2. TrueHud[www.nexusmods.com]: A huge improvement to not only health bars, but displays enemy / ally health bars as well, while having a clean hud and more. Bosses (or powerful enemies) will have unique huds that pop up, and as a Dark Souls fan, this is a great quality of life improvement for sure.

3. M'rissi's Tails of Troubles SE[www.nexusmods.com]: While there are a handful of follower mods that are great, unique, and definitely a must have (Inigo, Sophia, Vilja, ect.) I personally love M'rissi and cannot play Skyrim without her. The quest, the depth of the backstory, the personality, the unique character model, and features are all terrific. I've grown to like her a lot, and she is very good in combat once you bother to upgrade her through certain quests or items. Must have even for at least one playthrough.

4. Alternate Start - Live Another Life - SE[www.nexusmods.com]: Extremely important to have if you ever want to do multiple playthroughs. Not only is it incredibly immersive and awesome to start the game as any of the following (guild member, necromancer, vampire, ect) but also skips that very long tedious intro to Skyrim. Trust me, only takes a few runs before you gotta have this mod to skip it all.

5. Skyrim Immersive Creatures Special Edition[www.nexusmods.com]: The vanilla game even with all the DLC's ... I feel like there's a lackluster of monsters or creatures. This mod fixes that and adds a bunch of em, all unique and lore friendly. Plus they scale with your character and apply a ton of new armors, spells, and more for you to use. Definitely worth having in any playthrough.

My top 5 would be in alphabetical sequence:

*Alchemy Potions and Food Adjustments:

The main thing benefit is that restoration potions are no longer instant - which I felt trivialized combat and also felt counter-intuitive - but over time. It is not, of course, all nerfs. Crafting potion durations, for instance, are also greatly extended, so you are not as rushed as before.

Greatly increases the number of enemies. I find the vanilla game too easy, but I do not want to increase the difficulty through the vanilla difficulty scaling. So I prefer keeping "adept" difficulty and increasing difficulty through mods.

I wanted a survival mod that imbues my games with some sense of realism but yet remain not too intrusive.

I've tried many combat mods, and this is the best I have found - with the added benefit of being one of the lightest (while still being comprehensive).

Yes~ as a matter of fact some have been updated for AE versions. Otherwise they're safe to use even if you do not own AE. I always read the front page in case things aren't compatible anymore.
TrueHUD should be compatible with MoreHUD, as TrueHUD is just the HUD parts of True Directional Movement separated from TDM.
Leaving out graphics and class-specific mods, including only mods that would enhance any play style:
