Illusion Muffle/invisibility spell levels up illusion quicker too.
Pickpocket increases on value of what you pickpocket,
Armour skills increase based on damage taken
Weapons increase based on base damage given, not the damage given just what the weapon would have done if not improved or enchanted...
not improving weapons and armour will increase the rate at which these increase.
If you are not an enchanter, block is also easy levelling. Make it legendary, get your best shield, find a frost troll and let it loose on your shield. After a while you are on 100 again. Maybe a tad less of an exploit. Depending on who you ask :D
Besides, at some point in the game one just wants to reach lvl81 so the good old Ebony Warrior comes along.

Most of the skills have a way to improve them relatively easy. Some of the skills have a way to improve them drastically like Telekinesis with fast travel or Harmony in the middle of Whiterun during a day time.
And never forget to study 5 points of the skill you are currently studying using trainers services with each new level you get. BTW to study a skill from 15 to 90 (it's a max level a trainer can teach you) it requires 120450 septims.

The alteration method suggested by mikaeliby is faster, but I have not actually got that to work, try that method first.
The Ebony Warrior .. .LOL .. i've never seen this guy, because I'm always ready with the game at something about Lvl 65-70 ... story finished, all dungeons clear, nothing more to do.
As others have said, magic is the way to go when it comes to power leveling.
I find the most effective is getting your enchanting to 100, reduce the costs of spells for a certain school by 100%, and use high level spells indefinitely.
The best one I found is going into a town (a good spot is the merchant square in Riften) and casting Harmony from Illusion tree. It only takes a few casts to go from 15-100.
