Actually we don't need to always use the horse-riding trick to scale up the boulders and slippery cliffs of those treacherous mountains.
Almost all the major mountains in Skyrim have hidden mountain passes, that are unmarked on the map, but work as sneaky shortcuts if you manage to spot the mountain pass and don't get sidetracked or lost while following it.

Wow, that's completely backwards.
You don't need to keep Arvak's skull once you've completed the quest, you can still summon him without it in your inventory.
AE has a deadric horse that you can also summon at any time, and it cannot die, not permanently at any rate. I will grant you need to be Level 46 to get that quest, but if you're not interested in doing Dawnguard that is an alternative.
