My recommendation? Just get the Special Edition. AE adds so much stuff, (junk), everywhere, its hard to tell where the actual game is. Then later get the AE on sale.
Most issues with AE and mods have been resolved.
The base game comes with the same 3 DLC's it always has but as of 11/11/2021 they added 4 Creation Club (CC) mods to it:
Fishing
Saints & Seducers
Rare Curios
Survival Mode
So they have become part of the base game.
They also introduced a new Anniversary DLC on 11/11/2021 which consists of 70 CC Mods.
Mods are of course plentiful for the above content.
For the Context:
I just wanna add some mods at my own for Skyrim SE (new graphic, visual etc.). Im not actually interest for new contents extend from creator clubs or else, that im not interest at all. Just wanna play Vanilla with nice texture, ui etc.
If you're just now purchasing the base game you'll be up to date (1.6.640).
The good news is pure texture and mesh mods for Skyrim Special Edition work on all versions. Matter of fact unless a mod has a .dll plugin you can use the vast majority of existing mods for Skyrim SE will work on 1.6.640 so in your case if pure texture mods are all you're adding you are good to go.
You really have to pay close attention when adding mods that are dependent on the Script Extender (SKSE64). Those mods must be for your game version.
I am enjoying it, but for someone who has not played the game, I think it would be overwhelming to the point of confusion.

Adult mod. There is many adult mod that isn't compatible with the cc content.
