So you can definitely go beyond 100 even thought the game doesn't really show or mention it.
It depends on whether you have "Fortify Sneak" or you are "harder to detect."

Muffle, and Stealth perk, have an effect at 100 skill, fortify sneak does not.
Note: I'm not aware of vampires getting any sneak bonus. You're not the first to talk about it, but I haven't actually seen any documentation and I don't remember having any spell effect (which is where the racial effects are) while Vampire that would boost sneak.
Well, according to the fandom wiki page for vampirism, vampires get a bonus called "Nightstlaker's footsteps", which makes you 25% harder to detect when sneaking. So it's a percentage thing and not a skill bonus thing, so I guess it still counts at 100 sneak.
Well there you have it. As long as it's "harder to detect" it does have a bonus effect at 100 skill.
And curiously it's a Stage 1 bonus, I figured it would be a Vampire Lord bonus. Before Dawnguard being a vampire was harder so the sneak+moving a night probably balanced that out.
