It'll never happen with Playstation, though. Sony have said time and time again that they'll never do cross play on their console. They do it with Final Fantasy XIV but that's because the game was developed exclusively for Playstation as far as consoles go and PC.
Ive watched videos of Sea Of Thieves and the console players just get destroyed by the PC players. It sad to see the poor aim and slow reactions they have.

That's just an assumption. Sure, most play on the sofa but that doesn't include all.
Many console gamers play on the same spot they use when playing on their PC, hooking their console up to their monitors. I sometimes do that myself.
Mouse and keyboard support has been a hot topic and in extremely high demand on Xbox One for a few years now.

The only way this game could get cross play is if the game is released on the Windows store.
Steam and Microsoft won't ever allow for cross platform between the two platforms since Windows store is a competing brand and platform.
I'm getting the game for my brother and myself on Xbox One regardless though. :)

Unless the game is released on the Windows Store, there's never gonna be cross play between Xbox One and PC.
PS4 and PC = Forget about it. Sony has been adamant about not wanting Cross play for any games apart from FF XIV.
This is where you are severely wrong. Considering the new COD will be cross-play. Skyforge is cross-play and even Rocket League is Crossplay. Nothing is a definitive answer, which is why a Dev comment means 10000% more then a random that has zero background knowledge on this. Common knowledge would say it is possible, not that I should forget about it.
SkyForge does not have cross play. Not sure where you got that information.

They've recently opened up more on the subject and stated that they're ready for it, but the only games they have with actual cross play to this date is very limited
There are of course, Final Fantasy XIV and DC Universe Online which had Cross Play between PS and PC since they both released, but that's due to other reasons. DC Universe was developed for both PS and PC at the same time, same with Final Fantasy XIV.
While all that being said, Sony might open up for more cross play after Modern Warfare releases. Only time will tell really.
Xbox already have a few PC <> Xbox One cross play titles, but then again, they've always been more open for it compared to Sony.
However, for an indie title such as this, it'll be hard to get into Cross play, especially with consoles, since Microsoft already takes a ton of money just for updates to games on the Xbox Live store (roughly $50,000 per update according to the list i had back in 2017).
