In vanilla VC, the average lord is debauched. This means they will be hard for the player to keep happy, and also hard for the AI kings to keep happy, so there are a lot of AI indictments and lord shuffling.
In VC Balance Mod, the average lord is Pitiless, and all lords are shifted to mind less when fiefs are given to other lords. The player doesn't need to micromanage relations as much, but AI kingdoms are also more stable.
Both of the above approaches work, as both the player and the AI are balanced in this respect, it just depends on which you prefer.
I mentioned above, you can speak to lords before you give the fief, and try to convince them to support your decision. You can also ensure bad personality lords only have villages, so that they can't rebel and steal any land. You could also bribe them with the dialogue option to give them rings. You could also go try to recruit better personality lords. Those are the things that spring to mind at the moment.
