I've yet to find a more efficient way.
I have heard that you can starve them. it just takes a lot of time like you said, and you need to be well prepared.
Actually considering this I wonder if you can sneak into the town before you wait them out and buy all their available food. Would that reduce the amount of time?
Also, starving them doesn't actually make them surrender inmediatly, it just makes them lose morale and increases the chances of them surrendering when asked. Still, in order to convince them to surrender your army must have a numeric advantage, so you might as well just attack them instead of standing like a moron outside their walls for months.
Before the siege, make sure to place your best melee units at the top of your units list in order to have them with you during the 2nd and 3rd phases of the siege. The throne room storming can be pretty tough.
Regarding starvation: one of my vassals has actually sieged a Vaegir castle for weeks till they starved out and surrendered. I've set up a fest for the brave!
