How do I start a civil war against my king?
I am currently a vassal of the kingdom of Swadia and have a castle and a town. Is there any way that I can create my own fraction and break away from Swadia without losing my castle and town?

take a castle/town and say you want it then if the king doesn't give it to you then you can rebel.

Is that the only way? My relation with the king is 100 so how likely is it that he won't give it to me?

it alldepends on your renown, controversyand currently held titles with relation being imo the least important. have 100 relation with my king in my game and he gives me hardly anything.

Yes, you would have to give up at least your town to the claimant if you go that route.
I'm not sure if you'll have to give up the castle too because when I did it, I only owned Suno having given my other fiefs to people to increase relation.

If you do end up going in open rebellion, I'd recommend having pretty good relations (like 15-20) with at least 3 other kingdoms. When I first rebelled the Nords, Khanates, Swadians, and Rhodoks all declared war on me... So yeah, just make sure you've got pretty good relations with whatever kingdoms neighbor your town/castle.
