Viking Conquest - How to give my fiefs to my current lords
There is no dialogue option that i can find with my minister or lords themselves that allows me to give away unowned fiefs to my lords

I'm having this problem currently, anyone ever find a fix for giving away already capped land?

nevermind, if one of your companions takes the place as your minister you can assign fiefs to lords.

I have not become a king in Viking Conquest yet, but in some mods, you get more options when you appoint your wife or a smart/charismatic companion as your minister. So you may want to try that.

Otherwise, make sure that the fortification controlling the unassigned fief is not plundered, devastated, or under siege.

Yes, this is correct. In VC the local noblemen ministers cannot distribute fiefs. You have to appoint a companion. A wife might also work for this in VC but I don't remember. I always just assign one of the companions that does not get along with my main group as my minister.

THIS IS THE REAL ANSWER:

Get a wife/husband, tell the minister he's fired and you're going to replace him with your wife/husband or companion.

But I suggest your marital partner over the companion option since the latter serves well in battle.
