I may have found a way to prevent it depending on what your cause was.
I saved the game then turned off my computer without closing M&B then when I went back in I was greeted by a corrupted save file. I'm not going to sub to discussion so I will only recieve messages.
This problem is usually a sign of a corrupted save, so you can reload an older save and if it's not corrupted then the merchants should have all their stuff back.
If all of your save files are corrupted or you only have only save, then navigate to where your saves are located, by default the path is:
Documents>Mount&Blade Warband Savegames>Native
You should see all of your save files there along with a file called last_savegame_backup.sav, this is a copy of the last successful save that the game performed. Remove all of your saves except for this one and rename it to sg00.sav.
Now when you start up your game you should see one save that's not corrupted, load it up and go to a merchant and see if the problem is fixed. It is also important to note that this may take a lot of progress back but it should work, at least it did for me.
Hope this helped.
There are, however, some other bugs or mod-balancing/mod bug issues , where applicable, that can cause merchants to not have any money.
But, when merchant item lists get borked, the saved game file is corrupted - Period. Restart with a fresh game, preferably after making sure all game files are good and the install of the mod is, itself, not corrupted/buggy.
