Second, even in Pendor, armor can make a huge difference against many enemies, the kind you mostly face in day-to-day combat. But no, armor will not save you if a mythical elf lord shoots you in the head with a bow famed in legend.
Three, PoP is for really good players, to beat once, and then ask "What the ♥♥♥♥ am I, a masochist? I'm not playing this again", and then, a few years later to say "Oh, shiny! Maybe I'll give it another try..."

My guess is that the people who enjoy this style of combat are the same ones who hate RPGs becaue they are "too boring". If you are only interested in the fighting and want to have as many battles in half-an-hour as possible then the one-hit kill makes good sense. If you are slowly building a character over hundreds of hours of play time...it's a lot less fun.
I use archery whenever possible (which means sieges and naval combat, plus the occasional bandit ambush in a village) and by about level thirty or so, I can one-hit foolish peasants who can't afford armour or helmets but I cannot one-hit any decent troops who at least have chainmail shirts. The exact same thing should be true for NPCs in my way of thinking. I don't need some game developers to remind me that we are all mortal in my video games.
In the beginning of VC, I was leading every charge on my...pony, hacking and slaying with far too much glee, covered in gore, etc. Lately, my character stays nice and clean, remains well behind his men and issues orders...just like real life:( I mean, how many times do you have to watch an entire battle unfold without you because some javellin took you out before you even made it to their front-line?
Also, this isn't about "realism" either. If it were, then longbows would be the most dangerous threat out there and every soldier would know it. King Harold II probably wouldn't argue the point too strenuously in any event.
That's your first mistake - Prophecy of Pendor IS much harder than Native gameplay. It's tough. Players who charged into the middle of packs of troops and killed everyone they came across in Native get massively pwned in PoP if they try the same strategy.
There are significant combat changes in PoP. For one, it's much harsher. IIRC, piercing damage has been improved, as well. That means that arrows are a bit harsher if they've got piercing damage - No more laughing off a swarm of arrows...
PoP is tougher regarding combat than most other Total Convesion mods. But, that's partly because Native Warband is fairly forgiving and easy in regards to combat. Wearing the best armor in the game in Native means that you are an unstoppable Ogre Tank. On a warhorse with excellent charge rating, you are nigh unkillable.
But... that's Native.
It's easy.
PoP is not Native.
It is not easy.
Most mods make combat improvements. Yes, they're improvements, because you should have some fear of combat in this game. Even in Floris you can get one-shotted with a bolt to the face and a lucky spearman can gut your beautiful warhorse.
