Two good mods would be 'Warwolf' and 'Perisno'. Warwolf's map stretches across the entire Earth during medieval times and the age of exploration (you pick which to play in) it is expansive and fun to play but with quite a learning curve.

Perisno is a fun fantasy mod the combines with other mods (diplomacy, enlist in the army, etc.) the only problem is that there are hostile parties everywhere which makes the early game difficult but it is fun.

Everyone has his favorites. I am partial to these, in no order of preference.
1) Floris - It does not change the nature of the Native factions, but introduced one Hell of a lot of improvements to gameplay, items and troops. It incorporates a number of small mods. It comes in four flavors, I believe Basic, Gameplay, Expanded, and Workshop and I prefer "Floris Expanded"
2) Gekokujo - full conversion mod, set in Sengoku Japan. Very immersive, very polished. It incorporates firearms, and may be a bit easier than most mods.
3) Prophecy of Pendor - full conversion mod, set in a fantasy universe. A lot of new content, but rather challenging. Not a beginner's mod.
4) Brytenwalda - full conversion mod, set in post-Roman Britain. Very immersive, somewhat reminiscent of Viking Conquest (but came first)

Warwolf is very flawed in my opinion. The controls are clunky and the A.I always ends up just charging you, making strategy prettty pointless.
Try Floris, Perisno or Brytenwalda. For multiplayer you could try the Napoleonic Wars DLC.

The "Best Mods" are whatever mods that you enjoy playing. However, here are some that are commonly acknowledged among the best. (Warwolf isn't one of them... Someone has been spamming it for the past couple of days. I guess it just came out. Looks radically different from base Warband play and it probably needs a bit of fine-tuning, I would think.)

Floris: A "modpack" for vanilla Warband. It adds tons of features, new graphics, loads of new units, new tournament styles, new management tools, some new companions, new mercennaries, allows the player to play as a warrior in a faction's army, unit and weapon rebalances/AI etc.. Just too much to list, here. It is not a "total conversion" and doesn't change the base map, factions or all the familiar things like how one enteres tournaments, buys equipment, etc.. So, it's a great "First Mod" experience. And, no "bugs" other than what are in the base game and untouchable by modders.

It also comes with its own installer and there are many installation options for you to choose from, making installation fairly "idiot proof" if you're worried about messing up something while working at installing mods for your game.

Prophecy of Pendor: A "Total Conversion" mod that changes the map, the factions, units, all sorts of stuff. New units, new equipment, some light magic/fantasy elements, quests, etc.. But, it is definitely more difficult than Warband, so it's only advisable to take it on, seriously, once you've gotten use to the games mechanics and combat. A highly polished mod.

Perisno: Another well-tuned Total Conversion mod. Light fantasy, unique factions/map/quests/items/everything. Light fantasy and has something of a storyline worked into it, as well, IIRC.

The Last Days: A very popular "Lord of the Rings" mod that takes place during the War of the Ring. However, it deviates significantly from normal Warband play in that you can not assault towns and castles on your own, but you must complete objectives and swing the tide of battle in your faction's favor in order to get your commanders to finally assault the enemy. It is very well done, ported from the original vanilla Mount and Blade, but is in "perpetual beta", meaning some things are not finished, yet. It has a completely unique merchant and unit system, unique quests, special events, and many very well done "custom scene" locations taken from the books and put into the game as unlockable/discoverable locations. Sometimes buggy, but always fun and a unique experience that every Warband fan should have. And, you can play as part of any of the factions involved in the War of the Ring, including as an orc, if you want!

(Note: Pay very close attention to installation instructions. You will need to install three things, the mod, the "warband patch" that makes it compatible with Warband, and the "nightly patch" which fixes many issues. If you have any problems with the nightly patch, like it causing a new bug, then drop down to a previous nightly patch. IIRC, the last linked one is good, though.)

Gekoju: A medieval Japan mod for Warband. I haven't played it, but it is very popular, especially among Japanophiles. :) But, it is fairly well done, from what I know of it, and many seem to enjoy it.

Brytenwalda - (From the wiki) The mod is set in 7th century Britain where the wounds from the multitude of foreign invaders ravaging the country are still healing. Across the sea, Ireland is ravaged by constant clan wars with no true victor. To unite Britain and Ireland, a strong hero of legend is needed. They will be Brytenwalda, King of England.

There are several others, but I wanted to give others the chance to offer up their favorites. Among the ones I recommended, The Last Days is the only mod that may have issues, from time to time, and that presents a new Warband player with some confusing game mechanics. However, it's enjoyable enough and unique enough that it deserves to be mentioned and I encourage you to try it out if you're a fan of fantasy or of The Lord of the Rings.

Maybe as little addition:

1257 AD[forums.taleworlds.com] - A really nice medieval mod with much detail in history and combat related features. It also provides some unique features.

Europe 1200[forums.taleworlds.com] - Also a very nice mod about medieval Europe that really worth a try.

1860's Old America[forums.taleworlds.com] - A nice mod with it's setting in the time of US American colonization and civil war. It provides nice possibilities when you like such a scenario.
It got it's idea from the 1866 Western mod.

Currently I prefer Warwolf.
It have a very huge map, the whole world.

It provides two time frames, "Wolf and the Lion" that takes place in the year 1148, the "Age of Exploration" that takes place in the year 1573 and a "Twisted Time" that mixes many historical things together. In the Twisted Time period you can play the Holy War to defend the city of Jerusalem, to reconquer Spain, or you can form China, form a Mongol Khanate or even play as the ancient Macedonians under Alexander the Great, the famous Carthage or Rome to build the Roman Empire.

It have many unique features like exploration of ruins and other famous places over the world. This game mod really have some educational features.

You can colonize the new World or even Australia. (Only in Age of Exploration or Twisted Time scenario)

You can call in for holy wars that starts a war for all countries of a religion against another country of a religion.

The Armies are not anymore like some bigger groups of bandits who want to raid the countryside. You have to face the world with a more realistic size of soldiers. Good thing is you don't have to face them all in battle, they are scaled down. The armies are formed of the troops you have in your troop tree by relation of the sizes.
Only bad thing is that in combat you always only have your own army as troop types. Even when you fight with other factions together who should send other kind of troops into battle.

The Sea battles are different from basic. You can steer you ships and fire cannons.

You can get money with trade. The game provides many goods to make nice profits with them.

You can build up your towns. You can convert towns religions. You should think how you build your new build up town or conquered town to prevent rebellions.

The mod also have a very little research part. You can improve your equipment in towns. It still seems to be in progress as you can improve everything that is there without costs.

It provides Achievements. For those who have problems to play a sandbox game it gives some goals.

The mod brings up a little story line that teaches you how to do some of the things.

The worst thing about Warwolf is also the best - it is very huge so it can take some hours till you are used to all the new features.

Warwolf? I thought Warwolf was trying to copy total war, but failed. I've played it, it is honestly really annoying. The controls at least, if you wanted total war, just play total war. But anyways, that's just my opinion

True, if you want to play Total War, play Total War. But that's obvious. Or isn't it?

Warwolf is improving the overlay for commanding troops on the battlefield. But you still will be in a RPG. That's what M&B Warband is. A RPG with some minor strategy game features.
The base of my words is M&B Warband, not Total War or any other strategy game.
From the point of view of strategy games the controls aren't very good. But from M&B point of view the controls are an improvement...even I needed a few fights to get known to them.
