Yes, but they depend upon formation mods. For instance, you can tell your spearmen to Brace Spears in Floris and other mods that use the PreBattle Orders/Formations mods.
However, "Shield Wall" won't exactly form overlapping shields, but it does a decent job of getting the most shield coverage for the entire unit. Braced spears will devestate a cavalry charge, but you have to micromanage spearmen and release them to normal weapon rules so they can take full advantage after the assault.
For infantry, the best protection against cavalry charges are braced spears, shield wall or a group of archers or crossbowment, if the cavalry is heavily armored, to take out those charging horses before they reach your units.
